Island gin is carefully crafted by the Scilly Spirit Distillery in St Mary’s on the Isles of Scilly. The carefully chosen, and ethically sourced botanicals are steeped for 48 hours. This allows all the flavours and oils to infuse the spirit. Once the gin has been created, it’s left to rest for at least two weeks to enable the flavours to meld and marry together, to create a smooth rounded spirit.

Product Details

The inspiration for Scilly Spirit’s gin recipe dates back to 1665 when the survivors of a ship, wrecked around Bishop Rock, were rescued by bold crewman in pilot gig boats from St Mary’s.

Part of that ship’s rich cargo was pepper from Java for the spice trade and so pepper is one of the 6 main botanicals, plus juniper, that make up this bold, vibrant gin.

Nose

Lovely balance of piney juniper, piquancy of cardamom, with a hint of orange, herbal lime leaf and warm familiar notes of cassia.

Palate

Full and rounded in the mouth, with soft citrus and juniper on the fore, followed by layers of fennel, a fruity peppery note and subtle spice. The savoury tones of the pepper and cardamom are balanced by a touch of sweetness from the orange and fennel.

Finish

Balanced with spice notes from pepper and cardamom with warm sweet notes from the cassia. Kaffir lime delivers the subtle citrus notes on the finish, encouraging another sip!

Ideal serve

A large measure of Island Gin over ice, garnished with a fresh kaffir lime leaf and a dried orange slice, with two measures of tonic.

About the brand
Scilly Spirit Distillery

In 2018, Hilary had the crazy idea to create a distillery on St Mary’s, Isles of Scilly where her family had lived for over 6o years. The islands were home for not only her grandmother (who lived until she was nearly 102), but also where her mother and father first met. Many of her relations ran hotels, restaurants, guest houses and were involved with Ambulance service and the church. Scilly is a very special place and together with her husband, Arthur, they started the process of learning how to make spirits and also to find a suitable building to create an Island Distillery and Gin School.

Sustainability

Sustainability

Scilly Spirit Distillery is committed toenvironmentally friendly production, taking care of their beautiful archipelago.

Their spirits are distilled using a closed cooling system and they are looking to install solar
panels so their spirit distillations have minimal environmental impact. The botanicals, once spent, are composted or are given to the local pigs.

As the bottles are so beautiful, we are sure that very few will be recycled with glass
collections, but turned into lighthouses perhaps? In 2019, Scilly Spirit Distillery won The Drinks Business Award for Design and Packaging in the Spirits Category and in 2020 they won Gold at the San Francisco World Spirits Design Competition which speaks volumes about how lovely their bottle is!

All their local deliveries are made in their battery powered van, so they reduce further CO2 emissions. They have designed cardboard packaging for posting their gin, so they
avoid using plastic.

They want to take care of these precious Islands we live on.

Whilst they are not certified organic, their footprint is light.
