Under the right conditions (predominantly very high pressure) the caffeine is drawn out of the bean and filtered, leaving the coffee flavour compounds unaltered. The caffeine rich liquid CO2 is diverted to a separate vessel.\u003c\/p\u003e\n\u003cp\u003eThe liquid CO2 is then returned to a gas by reducing the pressure. Under atmospheric pressure caffeine stays in liquid format and is easily separated. It is used for caffeine rich products (such as energy bars and drinks).
